Hearty One Pot Meal

With the cooler weather approaching, we bring you a delicious one pot meals from Don Grogg to please you, your family, and friends!  

Roasted Chicken and “Tortilla” Dumplings – The fastest and easiest method to make this dish is to buy one of the still warm, fresh roasted chickens sold at the HEB store deli’s, or you if you wish, you can oven roast one yourself. You can also make this meal with your leftover Christmas turkey.

Ingredient:

1 whole roasted chicken (HEB or home roasted – your choice)
1 quart low sodium chicken stock either store bought or homemade
1 quart tap water
1 cup chopped celery with a few leaves
1 cup chopped yellow or white onion
1.5 teaspoons poultry seasoning
1 teaspoon black pepper
Salt to taste
1.5 cups dry white wine
3/4 cup of heavy cream (optional)
1 dozen HEB home-style (thick) ready to eat flour tortillas

Cooking Instructions:

Debone and cut chicken into bite sized pieces. Then place the bones and skin in a four quart stock pot. 

Add the chicken stock and water. Bring to a boil and reduce to a low boil for 20 minutes. 
Remove the bones and skin from the pot. Add any additional meat that you can now easily remove from the bones into the stock pot. 

Add all of the other ingredients except the tortillas and cream and low boil for 20 additional minutes. Cut the tortillas into five slices vertically and three slices horizontally. Bring the stock to a rolling boil and add the tortillas stirring until all of them have separated in the stock. Reduce heat to simmer and cover for fifteen minutes, stirring a couple of times. Turn off the heat and stir in the cream.

Serve in large, warmed shallow bowls.
